Southern Ocean Lodge has launched its own gin, baillies 9. Blended specially by Kangaroo Island’s resident distillers of fine, wild spirits, John and Sarah Lark of KI Spirits.
baillies 9 is produced in small batches using fresh botanicals including a KI native juniper, called myoporum insulare. Batches are prepared seasonally and in small quantities, using Australia’s only basket still process. This style of production creates a distinct and unique flavour profile and guarantees a super quality beverage.
